  1. These recipes all look delicious and are perfect for the summer! Best of luck with the move Karina. I'm moving as well in under 2 weeks, so I know how stressful it can be.

I will definitely attest to your gluten free brownies being the best ever...holy. Moly. That pan of brownies was gone in less than a day (and there's only two of us at home right now). My husband couldn't believe they were gluten free.

  6. I am confused. You said at the top of the post that these recipes were vegan. But the brownies have egg in them. I was briefly optimistic that my three year old, who has a severe egg allergy, might have been able to taste brownies at last :(

  7. @Saoili- you can replace eggs with 1 tbs flax and 2 tbs water- per egg. It works perfectly

    Dear Karina,

You ARE the gluten-free goddess! Every one of your recipes that I've tried has not only worked, but been fabulous! My freezer is full of your goodies...Multi-grain sandwich bread, pineapple coconut muffins, orange soda bread, strawberry muffins, quinoa chocolate chip cookies and olive bread. I use your brownie recipe in a springform pan as a decadent chocolate cake for company.

I've also found your recipes to be tolerant to my fiddling...I use coconut sugar instead of brown sugar, honey instead of sugar etc. and everything has been delicious.

Thank you for all your hard work and your fabulous recipes!

  9. I just wanted to come here and thank you for your GF focaccia bread recipe (the one with tomatoes and garlic). I made it with GF pasta tonight for my husband. He LOVED it. And our preschooler who is mortally afraid of trying anything GF asked for seconds and thirds after being told he had to take one bite.

You, Karina, make GF cooking/baking fun, delicious, and approachable for newbies like me. Thank you, thank you, thank you for this blog and all the recipes and tips you provide. You have been my guide in this relatively new GF journey, and you are the main reason I have not given up (the other reason being the lovely grocer who stocks a multitude of GF bulk flours and corn/quinoa pasta). You are a blessing to my family!
